Agreed.  The cast iron skillet does a good job of that.

My first Calculus professor at UA (Dr. Bill Gray) had 3 sections to his website.  One was for the class - assignments and such.  The second was a lot of info on the Gray family geneology.  And the 3rd section was dedicated to the proper seasoning and care of a cornbread skillet.  He was a fine Southern gentleman.
