Bacon-Wrapped Stuffed Hot Dogs



Ingredients:
 1 teaspoon ketchup
 1 teaspoon Dijon mustard
 4 large hot dogs, knockwurst or kielbasa
 1/2 ounce cheddar cheese cut into long sticks
 2 tablespoons chopped onion
 1 cup chilled sauerkraut, drained and rough chopped
 4 slices uncooked bacon
 Vegetable oil for coating grill
 4 long hot dog buns or small baguettes

Directions:
 Prepare grill for direct medium heat. Combine ketchup and mustard in small bowl. In a separate bowl, mix sauerkraut with chopped onion and set aside. Slice open hot dogs lengthwise, down the center, forming a deep pocket in each but not cutting through. Coat the insides with ketchup/mustard mixture.

Place a strip of cheese deep within pocket of each hot dog. Top with sauerkraut and onion. Enclose any cheese at the ends in sauerkraut also or it will drip out while grilling.

Wrap a strip of bacon around each stuffed hot dog securing with toothpicks at each end. Make sure to wrap tightly so stuffing stays in, but not so tight that when hot dog cooks and expands it will tear the bacon.

Coat grill with vegetable oil so hot dogs won’t stick. Place hot dogs on grill, stuffed side down. Grill for 2 minutes until bacon on that side is cooked, turn the hot dogs a quarter turn and grill for two more minutes. Keep turning and grilling until bacon is completely cooked, covering grill for more uniform cooking.
 Grill hot dog buns or baguettes. Remove toothpicks from hot dogs and serve.

Enjoy ever minute of it CB. It seems like yesterday my two girls were in the first grade. One graduated college last year and lives/works in B'ham now, the other with be a sophomore at UNA next year. Tons of great memories but the time went by far too fast.

The Inner Harbor is nice. Our industry trade show is in Baltimore every 5 or 6 years. The Convention Center is walking distance from the Haror. Lots of good places to eat. I went to the aquarium about 20 years ago. I'm sure it has changed a lot since then. I remember taking an elevator to the top and walking down a sloped ramp with exhibits all the way to the bottom.

The Inner Harbor is a nice area.  We occasionally will have a work conference at one of the hotels there.

Yeah, the Harbor is great. Some really good restaurants around there, plus the aquarium and the USS Constellation is docked there as well. Pmull, elevators have been replaced by escalators and moving walkways. It is an interesting pacle, and little cb seemed to really enjoy it. They had two things there that I had never seen in captivity before: one, there is an Australian exhibit that included a death adder in it. I have always been fascinated by exotic snakes (just as long as they stay behind that six-inch piece of glass). Two, there was a moray eel in one of the tanks. That thing was huge.
